How do you quickly and accurately inform hundreds of guests about the menu, allergens, and climate impact? For Nyborg Strand Hotel & Conference, the answer is digital buffet signs.

With a solution from Delfi Technologies and Commerce Studio, the buffet has become a digital touchpoint where technology, sustainability, and gastronomy merge — to the benefit of both guests and the kitchen.

For more than 125 years, Nyborg Strand has been a gathering place in Denmark and is today one of the country’s largest conference hotels. Now, the hotel has taken a digital step into the future of the buffet experience.

Buffet information in real time

The digital buffet signs not only display the day’s dishes, but also allergens and CO₂ footprints directly at the food — information that previously required asking the staff or was hidden away in internal systems.

For the kitchen, it means a new way of presenting the buffet.

The signs update automatically, ensuring the information is always correct — even when the menu changes throughout the day.

Less administration in the kitchen

Behind the solution is a collaboration between Commerce Studio and Delfi Technologies. The system is integrated with Commerce Studio’s digital menu planner, Souschef, as well as CalcuEasy, which Nyborg Strand uses to calculate and manage, among other things, allergens and CO₂ consumption. This data is automatically sent from the system to the digital buffet signs.

Previously, menu signs were written and printed manually. Today, the buffet is updated digitally.

For a conference hotel of this size, precision is crucial. During large events, up to 1,400–1,500 guests are served at the same time.

When data is pulled directly from the menu planning, the kitchen is also ensured that the information is always correct.

Sustainability on the menu

Nyborg Strand is working purposefully to reduce its environmental footprint through energy savings, responsible materials, and increased recycling.

The digital buffet signs are part of the effort and display the CO₂ footprint directly next to the dishes.

— When we make the CO₂ calculations visible at the buffet, it becomes clear how the choices affect the climate. We want to give guests a well‑informed basis, says Head Chef Kasper Marcher Asmussen.

Unified digital communication

The same platform from Commerce Studio is also used for larger screens and info displays around the hotel, where guests can view menus, practical information, and messages during their stay.

Everything is controlled centrally, ensuring that the content is consistent and up to date across buffet signs, menus, and info screens — without manual handling.

The result is faster and more efficient communication between the kitchen, staff, and guests.
